DIY Frittata

There’s nothing more satisfying then an Egg Mixed with Spices and Veggies.

So I bring you an ‘Egg-Cellent’ recipe if you want something quick and easy in the Mornings, Lunch even for Dinner!

The What:

  • 3 Eggs
  • Pinch of Salt
  • Pinch of Pepper
  • Pinch of Paprika Powder
  • 1/2 Tsp Minced Garlic
  • 1/2 Tsp Minced Green Chillies (If you’re a fan of Chillies feel free to chop them up)
  • 5 Baby Plum Tomatoes
  • Mexicana Cheese
  • 1-2 Tsp Coconut Oil (You can Add any type even Butter, but I’ve noticed Coconut oil doesn’t tend to grease ones palate)

At This Stage…

You can add anything you want…
Spinach
Sweetcorn
Asparagus
Mushrooms
Onion
Handful of Finely Chopped Coriander
A Pinch of Chilli Flakes

The How:

  • Heat a Pan
  • Add The Oil
  • Give the Batter a good Mix and Pour it into the pan
  • Let it cook for a couple of Minutes on Medium High Heat
  • Pop it under the Grill until the Top of the Omelette doesn’t go nice and Golden (The Omelette will turn out to be light and fluffy too)

It’s ready to Eat, Share and Enjoy.

You can serve it with some Green Grass (Rocket, Watercress, Pea Shoots)
