Khalwa

I came across this recipe in the Prashad Book by Kaushy Patel.
They’re so light and delicious. The proof is in the fritters.

At first, I used to measure the Flour out, and my Mum would happen to stroll into the Kitchen she’d give me a strange look as if I were crazy, because like her, I NEED to measure things out. I soon realised I have a steel bowl and if I top that up with Chickpea Flour it’s the same amount I need for this recipe. Apart from that everything else like the Spices you can go according to your pallet.

I always use a bit of ENO in this, just so that they become very light and not too heavy. I personally find Chickpea Flour to be very heavy so I use ENO, if you don’t have ENO at hand you can use some Baking Soda.
