Rainbow Salad

As soon as I posted this on my Instagram I had people asking me for the recipe, I genuinely thought, really? It’s only a Salad.
Sometimes for Dinners I tend to have Salads because I’ve had a heavy Lunch, or I just want to feel healthy!
Preferably a Spiralizer would be ideal, but if you don’t have one don’t worry it’s totally fine, yo can chop everything up in any shape your heart desires, whether it’d be sliced up, cubed up, julienned up. Taste is key.

This is quite an easy going recipe, use as much or as little you require. Plus you can add whatever your heart desire from chopped Nuts to Pea Shoots.

The What:

  • 1 Medium sized Carrot
  • 1/4 of a Cucumber
  • Handful of Baby Plum Tomatoes
  • 1/4 of a Yellow Pepper
  • Couple of slices of Pickled White Turmeric
  • Coriander finely chopped

Lemon Dressing

  • 1/4 – 1/2 Lemon juiced
  • Salt To Taste
  • Pepper To Taste
  • Pinch of Dried Mint
  • Pinch of Dried Parsley
  • 1/8 Tsp Garlic paste (optional)

The How:

  • Cut up the Veggies or Spiralize them.
  • Mix everything for the dressing and pour over the Veg.
  • Garnish with Coriander.

It’s ready to Eat, Share and Enjoy.
